Having used a Mychron for a few years I have to say I have never had a problem with eratic temp due slightly low voltage. I have seen problems when the 2 yellow conectors are connected the wrong way round. This gives a constant wrong temp, if the temp is going up and down showing very high temps you almost certainly have a loose conection or broken sensor.
The simple way of checking accurcy is to imerse the sensor in a boiling kettle.
