Hi, I think there is a team who is training and taking karts to one of the canary island. Not sure about the cost nor about the track there, but one thing is sure the weather is ideally to do kart training there: always nice weather but never too hot.
Also Britanny ferries can take you to north of spain (Santanders or Bibao), not sure which track you can find there also weather wise you are not guaranteed anyway to have nice weather at this period of the year - you have little chance to get frozen tracks but it won't be very warm.
When you will add up the cost of the operation, I bet you will rethink. Best is for you too look at the weather forecast and depending on local weather forecast go karting or not. Last weekend I raced at Whilton Mill it was dry and not too cold - enjoyable.
