Sprocket size ????

Hi guys just trying to get my head round what sprockets to use. Am i right in thinking that the

More teeth the more torque so if you get a track with more bends then better to use a higher number teeth sprocket.

Less teeth less torque but more top speed

Is this right and what is the best way to jude and what to look for when looking at a track and deciding what sprocket.
