Not very much at all as far as I can work out. Of all the changes I made to my experimental chassis over the last 2 years, going from 30mm to 50mm axle made the least. Only the first two chassis I played with were run with 30mm axles - by the time I built the third one up I had decided that 50mm is preferable for reasons other than stiffness. I often had issues keeping the hubs from moving on the left hand rear with a 30mm axle, especially in really hot weather. With 50mm you can just nip the pinch bolts up to a reasonable rather than ridiculous torque and everything stays where you wanted it to be.
Soft medium and hard will all deflect by about the same as each other, but I think I know why they feel different to drive. I'll expand on that later. I'll also do a quick calc to find out just how much stiffer a 50mm axle is than a 30mm axle for the same "overhang" between hub and bearing. Instincts tell me it's going to be rather a lot.
