In my experience it doesn't matter as long as it is fresh. The only criticality is what type is in there now as some of the brake fluids are incompatible and will cause your seals to perish if you mix them!
Dot 5 is pretty good and available everywhere. Some people promote the use of the Putoline fluid but at a higher cost for something that meets the same spec, I don't think it is worth it. Hall fords do an own brand Dot 5 and I have used that for ages with no issues.
If you are not sure of the standard that you have in there already, then make sure to remove all the pipes and completely strip down the brake system and thoroughly clean it. Then refill with new fluid and bleed, bleed, and bleed again to ensure that the new fluid is fully incorporated. Then keep the bottle so you know what to top up with in the future.
