In principal you are right, the more rear sprocket teeth the better the acceleration, but, the lower the top speed.

Now on some cicuits you run less maximum revs than others, depending on circuit and motor characteristics.

So your best course of action is to find someone friendly with knowledge of the class and track and ask for a good starting point...
