Demon Tweeks sell the bi-pack expanding foam that (I think) you have in mind.

From bitter experience, just recovering from cracked ribs from using a seat that was TOO BIG at Le Mans, make sure you are properly gripped.

It may be a little more expensive, but why not buy a seat that fits your ribs, and cut it down to make a custom fit seat liner? They use this sort of thing in Club 100, Steve Tillett will give you some help on this, I am sure.
