"I can't see what is wrong with buying sealed bearings"

There's a regular belief on here that there are special conditions attached to karting that evades all bearing manufacturers.

It's coupled to the belief that exposing the balls to dust and road grit will make them more efficient and that a squirt of 3 in 1 designed for very light machinery is the equivalent of a lubricant designed for heavy duty.

Then there is the joy of twirling one's axle in the pits and suggesting that this somehow replicates the conditions on track or that the viscosity of a grease under twirling conditions is an indicator of its viscosity when under load.

On the other hand, it is possible that a grease designed for long life, heavy loads and constant speed is not ideal for the variable speeds, comparatively light loads and short life normally expected of a kart bearing. One thing is probably certain though. Taking the dust seals off a bearing almost certainly guarantees that its performance will be worse the moment a small amount of road dust gets in there than it would be if you left them on and the dust didn't get in there, no matter what grease is in the bearing.
