You can also get carbon fibre steering wheels

The trouble with suppling CFRP or similar components to karts is:

(a) They're simple machines without as many components as a race car, hence less possibilities for CF
(b) Karting is meant to be a cheap form of motorsport (not always true :S) but the point is that CF components would be more expensive to buy than conventional materials so for your average racer its not going to be considered (unless they need to drop serious weight off the kart)
(c) Many of the major metal components on the kart flex during cornering (chassis, axle etc.) - the handling of the kart is designed around this so replacing major components with CF would pset the kart as it would be overly stiff
(d) Unlike metal (which can be reshaped with hammer and brute force) or plastic (hot water and a block of wood) - CF components would be extremely difficult to restore if damaged and replacements would not be cheap - and unlike F1 theres a lot more bumps and scrapes in karting which could damage components

At the end of the day, current karts are not built to use CF for major components - you could try and design a kart with CF in mind however with carbon steering, bodywork and maybe even frame
