Some classes like TKM have rules against the use of carbon fibre except for floor trays and possibly chain guards, brake ducts etc, other classes do not.

Its all about being able to demonstrate an advantage that justifies the additional cost. Or coming up with a product that is a "must have" to make the kart go faster and that is allowed by the class rules.

I can think of one that I have always wanted to try and I am sure others on here may have some ideas?

Let's wait and see what gets posted.
