EVXX brake bleeding / setup explained

Hi, I have just bled my brakes on my EVXX but want to make sure its done correctly and that I havent missed anything out.
I used the correct bleeder, connected it to the threaded shaft beneath allen bolt, released cleed nipple and valve on bleeder then lightly squeezed bottle until fresh oil was through, whilst still squeezing i nipped up the nipple, closed valve and repeated on the other side. Does this sound right??

Also, what is the purpoe of the 2 large caps on the master cylinder?

Lastly, the brake pedal is quite far forward, the bolt that rests on the chassis is nearly all the way out - can this be adjusted??
