Watching that video again, they take the kerbs that they can (and will be faster) and don't take the kerbs that won't be faster. I see no difference from today. Just because that circuit has few kerbs that will make them quicker doesn't mean they wouldn't if there where. I heard stories of Mike Wilson taking so much kerb he cleared a photographer lying in the gravel on a chicane.

No need to use a kerb so no one does. Kerbs are no different, just depends on the circuit.

They take one kerb, should take you about 30seconds to spot it and thats because its faster.
