Force! If they don't slip out easily, get a screwdriver/punch and knock them out, being careful to hit the bearing not the rim. To get them in, a bit of lube, and gently ease them in. If you put them on the stub axle of the kart, with the spacers, and tighten up the bolt, it will push the bearings in.
