Both tyres can be fitted either way round - we also have the writing on the outside.
Pressures with vary according to track temperature and how experienced your driver is. With your wet tyres if the track is drying out you can drop the pressures very low to reduce wear on the dry patches if you do not have a set of partly worn wets to use.
Best bet is to ask around at your local track as most people will give you an idea of the pressure range they are using.
